Mira's Ladle

Babcia Mira has been unemployed for over two years now. She has been looking for a job, but with the current economy has been unsuccessful. Sometime in September, just as her unemployment benefits were about to run out, she was talking to Joe about her cooking. We always compliment her on her dishes and tell her how Americans would love her polish cooking. Anyways, her and Joe came up with an idea to open a polish food cart. It would serve soups, potato pancakes and dumplings. We looked to buy a food cart on craigslist, but we were unable to find something that matched our requirements, so we decided to just build one. To save money, we wouldn't hire any contractors but would just build it ourselves in between work and on weekends. We bought a 7'x16' flatbed and began construction in October. We had some help from Joe's dad and his brother, but the majority of the work has been done by Joe and me. We had to hire an electrician and a plumber to have everything up to code, but other than that we did everything else. The interior and exterior. We finished work just at the beginning of April and we plan on opening the cart on Monday, May 2nd. Phew, what a crazy 6 months. We definitely learned a lot about construction and I have to say that I won't miss working outside in 40 degree rainy weather. Overall though, we had a good time. Joe and I enjoyed working together and it gave us a lot of alone time while Aria stayed at home with Babcia. We wish Mira all the luck and know that with her delicious cooking she is bound to be successful!
